I've published the article about AVR-based accelerometer a few days ago. Here is another stuff with Microchip PIC.
You can find the accelerometer PIC project at PyroElectro pages. It uses 3-axis ADXL320 accelerometer from Analog Devices. This project shows the basic principes of MEMS accelerometer usage.
One of the practical application is the personal car accelerometer.
